                              Chicken Congee

     1/4  cup           long-grain rice
   2      tablespoons   glutinous rice
   2      quarts        fresh or canned chicken stock
                        or
   1      quart         chicken broth -- combined with
   1      quart         water
   1      cup           cooked chicken -- 1/2" cubes
   2      teaspoons     salt
     1/2  cup           preserved kohlrabi -- finely shredded
   1      cup           lettuce -- finely shredded

PREPARE AHEAD:
Combine the long-grain and glutinous rice in a 2-quart saucepan, add enough
cold water to cover and stir thoroughly.  Pour off the rinse water.

Have the rice, stock, chicken, salt, kohlrabi and lettuce handy.

TO COOK:
In a 4- to 5-quart heavy saucepan, bring the chicken stock to a boil over
high heat.  Stir in the rice, partially cover the pan, reduce the heat to
low and simmer for 2 hours.  Add the salt, then the chicken.  Then ladle
into individual soup bowls.  Serve very hot and garnish the bowls with 1 or
2 tablespoons of shredded kohlrabi and lettuce.

   2      tablespoons   pork fat
   1      tablespoon    garlic -- minced
   1      tablespoon    ginger -- minced
   1      cup           sweet or glutinous rice
   4      cups          pork broth
     1/2  pound         diced pork
   1      tablespoon    red chile oil
                        Mung bean sprouts
                        Fresh cilantro -- chopped
                        Ground black pepper

Render the pork fat over medium heat.  Add the garlic and ginger and cook
for 3 minutes.  Add the rice, broth, fish sauce, pork, and chile oil and
bring to a boil.  Reduce the heat and simmer until the rice begins to
disintegrate, about 30 to 40 minutes.

Serve garnished with the bean sprouts, cilantro, and black pepper.

                               Duck Congee

                        duck bones, neck and wings -- leftover
   6      cups          water
   1 1/2  teaspoons     salt
   1      cup           long grain rice -- washed, drained
     1/4  cup           coriander or parsley leaves -- chopped

Put duck bones, neck and wings in a large saucepan.  Add water and bring to
a boil.  Reduce heat to low.  Add salt and simmer, covered, for 30 minutes.
Add rice to soup, cover, and simmer for 2 more hours.  Before serving in
individual soup bowls, remove the skin, bones and discard.  Garnish with
coriander or parsley.

                               Fish Congee

   1      cup           raw long grain rice -- washed, drained
   2      cups          chicken broth
   4      cups          water
     3/4  pound         filet of white fish, 1" square, 1/8" thick
   1 1/2  teaspoons     salt
   2      teaspoons     dry sherry
                        Pepper
                        Coriander or parsley leaves

In a large saucepan combine washed rice, chicken broth and water and bring
to a boil.  Reduce heat to low and simmer, covered, for 2 hours.  Add fish,
salt, sherry and a dash of pepper.  Cook, uncovered, for 30 seconds and
serve in individual soup bowls garnished with coriander or parsley leaves.

                               Pork Congee

   1      cup           raw, long grain rice
   6      cups          water
   1 1/2  teaspoons     salt
     1/2  pound         ground pork
     1/2  teaspoon      cornstarch
   1      tablespoon    vegetable or peanut oil
   1      tablespoon    soy sauce
     1/2  teaspoon      sugar

In a large saucepan combine washed rice, water and salt.  Bring to a boil.
Reduce heat to low.  Simmer, covered, for 1 hour and 45 minutes.  Meanwhile
blend together the pork, cornstarch, oil, soy sauce and sugar.  Add meat
mixture to congee, stir gently, cover, and simmer for 15 minutes longer.
Serve in individual soup bowls.
